The everyday wine par excellence that has graced Piedmontese tables for more than a century. The 2024 vintage marks a restart characterized by the rediscovery of an ancient but to all intents and purposes contemporary taste. The ruby red color ,the scents of almond,and its dry taste become important pillars of immediate drinking that recalls the taste of memory.

CLIMATIC TREND

The 2024 vintage was marked by warm-humid weather that broke the drought trend of recent years. Persistent rains remedied the accumulated water shortage, but also put a strain on agronomic management.The season required great care in the vineyard, with variable results depending on the location and exposure of the vineyards. Good temperature swings in the higher cru encouraged balanced ripening and a fine aromatic profile.The harvested bunches, healthy and with low alcohol contents, promise fresh, elegant wines with good evolutionary potential.

Vinification

Production of this wine begins with a manual harvest in 20-kg crates. After destemming-crushing, submerged cap fermentation is started inside rotofermenters. After about two days, with the formation of the marc cap, there is a délestage of the must and removal of the grape seeds using an integrated auger. The must thus separated is then reunited with the skins to continue maceration. Shortly before the end of alcoholic fermentation, racking takes place, ensuring that the wine finishes the same fermentation away from the skins. This technique results in a softer, rounder finish on the palate, making the wine particularly balanced and enjoyable.

Refinement

Malolactic fermentation takes place immediately afterwards, in the same tank, giving the wine further elegance and roundness. Two racking takes place before bottling, which is useful to promote natural clarification and enhance the aromatic expression of the wine, which will reach its full complexity after 6-8 months of bottle aging
