The use of rotovinifiers, together with shorter macerations and a maniacal attention to cleanliness and finesse of aromas, has allowed the consolidation of a unique style. Viberti is distinguished by its ability to express varietal aromas that are clear, fresh, never forced, and always respectful of the fruit and terroir.
In the winery we pursue a conscious balance between tradition and innovation. We use technology selectively, only when it serves to enhance the identity of the wine. Fermentations are shorter, but always guided by a clear intention: to preserve the purity and freshness of the fruit.Alongside steel and cement tanks, the use of the truncated wooden vat continues, a symbol of a tradition that evolves without ever breaking down.
Today, as in the past, our truncated conical vats are made of unroasted oak. This type of barrel, used mainly for Baroli and cru Bricco Airoli, allows slow and precise development of varietal aromas. It is a technical and cultural choice that guarantees elegant, deep wines capable of crossing time.
